First published in French as ‘Pâtés à Tartiner’, this compendium of spreadable treats is the answer to all your snack-time cravings, pudding shortfalls and gift dilemmas. Those familiar with Rachel Khoo and her ‘Little Paris Kitchen’ TV series will no doubt recall just how ‘little’ her kitchen is, but that has posed no hurdle to her culinary creativity, and here she demonstrates how simple, healthy and rewarding making your own spreads can be.

The book contains over 90 recipes accompanied by some heavenly photos. Its layout is practical, with chapters dedicated to key ingredients and a preceding section of hints and tips on working with each of them. The necessary equipment only extends to a blender and sieve, and none of these recipes are a complex affair: average preparation time is just 10 minutes, and once made, most creations can be stored in the fridge for 2-3 weeks (‘can’ being the optimum word here, as it is unlikely they would last that long in any household).

The sweet-toothed are best catered for in this book, especially chocoholics; who could resist a smear of dark chocolate mocha on their brioche, or a spoonful of marbled white chocolate and raspberry whirl? Pralines, fruit curds and inventive caramels follow, and Khoo’s version of sticky Belgian favourite sirop de Liège is a winner, too. The savoury section is a little thin on the ground – or the tartine – with just a handful of tapenades, hummuses and creams, but which are, nonetheless, equally creative and delicious. Recipes for coconut jam and salmon rillettes with wasabi acknowledge Khoo’s Malaysian-Chinese heritage, but the concept underpinning the whole book is decidedly French: that of nibbling on a hunk of bread generously slathered with something from a Kilner jar. Moreover, the book is playful without being childish; a balance not always easy to achieve.
